Mouth-watering Develi cıvıklı gets its name from the way chunks of meat are finely chopped with a double-bladed knife and the fat is worked until soft with blows of the double blade. Meat from sheep and cattle raised on the slopes of Mount Erciyes is rested for a full day to get it ready for cooking. It is spread on a pide-shaped dough together with tomatoes and peppers and slid into the oven. After 5 minutes in a stone oven, it is ready to serve.
